Explanation of Common Types of Roasts
Light Roast: Our style of light roast is also known as Dark Cinnamon or New England Roast. This roast is generally lighter than the American norm with the exception of the Northeastern United States. The coffee produced is higher in acidity and can produce a grain-like flavor. Although very few coffees are able to handle such a light roast those that can have very unique and distinct flavors.
Medium Light Light to medium roasts are also called American Roasts. This roast is the norm for most American consumers with higher usage in the Eastern United States and progressively lowers as you reach the Northwest. The color is a light brown and the coffee is roasted to the point where sugars begin to caramelize which imparts a nutty flavor.
Medium Roast. This roast level is known as a City Roast. Roasting temperatures are slightly higher than the American roast and this is the norm in the Western United States. At this roast level sugars are fully caramelized and the coffee will have subtle flavors of caramel and cocoa. The color of the beans can be described as rich milk chocolate.
HomeRoast ProfileMedium Roast
Medium Dark: Due to the popularity of this degree of roast in the specialty coffee industry it is known by a variety of names. The most common names are Full City, European, Dutch, Medium High, Viennese, Continental, and Espresso Roast. Acidity begins to diminish and the caramelized sugars take on a bittersweet flavor reminiscent of dark chocolate. Small droplets of oil form on the surface of the bean once this level is reached.
Dark: This is a very dark brown, almost black, bean. French, Italian, Spanish, and After Dinner are a few of roasts classified as dark. Many describe this roast as bold. Flavors become smoky and carbon-like and very little acidity remains. The surfaces of the beans are covered with natural oils which cause them to glimmer.
